Baked Apple Dumplings

I never get sick of making desserts that feature apples or caramel sauce and its even better if they are combined as in this recipe,  to create this heavenly dessert. It’s quick and easy to make. A perfect dessert on a winters night.

Ingredients

Dumplings

  • 1 cup self raising flour
  • pinch salt
  • 2 teaspoons icing sugar
  • 60g butter, chopped
  • 2½ tablespoons water
  • 1 egg
  • 2 medium sized Granny Smith  apples, peeled, chopped coarsely

Caramel sauce

  • 50g butter
  • 1 cup firmly packed brown sugar
  • 2 tablespoons golden syrup
  • 2  cups water

 

Preparation

  • Preheat oven to 180°C.
  • Add flour, sugar, butter, water, salt and egg into the bowl of a food processor. Blend until the dough clumps.
  • Divide the dough and chopped apple into 8 equal portions; carefully press the dough around the apple pieces to enclose. Place the dumplings in a greased shallow ovenproof dish (2-litre capacity).
  • For the sauce, add all the ingredients to a microwave bowl and place a plate on top. Heat on high for 3 minutes. Stir and heat for another 2 minutes.
  • Carefully pour the sauce over the dumplings in the dish. Bake uncovered in the oven for 20 minutes. Spoon the sauce over the dumplings. Bake for another 10 minutes or until the dumplings are browned.
  • Serve warm with cream and or ice cream.  Best eaten soon after baking.
