Apple Upside Down Cake with Salted Caramel Sauce

Confession time… I love yellow cake packet mix as a base for desserts. Use a good brand like Duncan Hines or Betty Crocker for a great result. This recipe is easy and makes a dessert with the wow factor. If you prefer, make your own yellow cake recipe and then follow the steps in this recipe. So nice served with whipped cream and/or ice cream.

Serves 8

Ingredients – cake

  • 6 Granny Smith apples peeled, cored and sliced in rings
  • 100 grams salted butter
  • 1/2 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon cardamom (optional but yummy)
  • I packet of yellow cake mix

 Ingredients – sauce

  • 1 cup brown sugar
  • 1 cup cream
  • 50 grams salted butter
  • ½ teaspoon sea salt flakes (you can omit the salt, but it does intensify the flavour)

 

Preparation – cake

  • Prepare the cake according to the directions on the packet; alternatively you can make a yellow cake following your preferred recipe.  Grease a 20 cm deep cake pan and line with baking paper on the bottom.
  • Dot half the butter on the base of the pan and sprinkle half the sugar over it and all the spices. Layer the apples in the bottom of the pan, building up layers until they are all used up. Dot the rest of the butter and sugar on top of the apples. Carefully spoon in the cake batter and bake according to the directions on the packet or your recipe.
  • When the cake is cooked, allow it to cool in the pan for 5 minutes. Run a knife around the edge of the pan and place a heatproof serving plate upside down onto pan; turn the plate and the pan over. Remove the pan and pour half the caramel sauce over the top of the cake. Cool for 30 minutes. Serve warm or cool with the remainder of the caramel sauce and whipped cream or ice-cream. Store covered in the fridge.

Preparation – sauce

  • Place all ingredients in a 1 litre microwave safe jug/bowl. Cook in a microwave on high for 3 minutes. Stir and cook for another 2 minutes on high.  Alternatively place all ingredients in a saucepan and heat on low until the butter and sugar melt and then increase heat to medium and cook for 5 minutes stirring continuously. The sauce will be very thin but will thicken when cooled.
